Santa Fe Bruschetta with Chopped Jalapenos & Radicchio Leaves

Ingredients

  • 4 oz. Kretschmar Master’s Cut Santa Fe Turkey Breast - diced
  • 1 ½ oz. diced tomatoes
  • ¾ oz. corn kernels, roasted
  • 1 tsp. basil, chiffonade cut
  • ½ tsp. cilantro, chopped
  • ½ tsp. jalapeno, chopped fine
  • 4 pieces radicchio lettuce
  • 2 oz. olive oil
  • 1 6” baguette

Instructions

  • Slice baguette into 4 equal croutons, 1 1/2 “ thick. Brush with olive oil and grill until toasted. Combine turkey, tomatoes, corn, basil, cilantro and jalapeño in a bowl. Season with salt and pepper. Place radicchio on top of each crouton. Place even amounts of turkey mixture on each of the radicchio leaves.
